Banana, Chia & Walnut loaf (GF, DF)

My homemade recipe. A great afternoon tea with a cup of tea. My Dad likes to coat his slice with lots of butter!
I used:
1 cup buckwheat flour
3/4 cup organic banana flour
1 tsp baking soda
1 large ripe banana, mashed
1/4 cup coconut sugar
1 tbsp rice malt syrup, Plus 1tsp extra for glaze.
2 large eggs
1/4 cup almond milk
1/3 cup coconut oil
1/4 cup walnuts , crushed(optional)
To make:
Preheat oven to 180c / 160c fan-forced, and prepare loaf tin
In a large bowl mix together both flours and the baking soda.
In a small bowl melt coconut oil, rice malt, and sugar. Add mashed banana and stir well.
Add banana mixture to flour mixture. Then, add in the eggs and milk and mix until combined.
Pour into loaf tin and top with crushed walnuts and drizzle over with rice malt syrup, glazing walnuts.
Bake for 30-40 minutes or until golden.
