Spiced Rice

Serves 3-4
This recipe was very sensual to the taste buds, particularly the next day for lunch!
It can either be done as a vegetarian meal, or Chicken/Pork can be added.

Pre-preparation for those who love their meat:
You will need:
2 Pork fillets (or chicken breast)
1 tbls sesame oil
2 tsp chinese five spice
1 pinch Himalayan Salt
Rub fillets with salt, spice and oil. Place in fridge, covered, for 25mins.
Preheat oven at 180*c.
Cook meat in pan on medium heat, about 2min each side, then bake for 10-15min in oven. Slice 1cm thick.
Other to pre-prepare:
Cook 2 cups brown rice
The rest... (veggie part)
Ingredients:
2 Brown Onions
2tsp chinese five spice
3cm ginger, peeled, grated OR 1tbls minced
300g button mushrooms
50g shiitake mushrooms
200g snap peas, washed, chopped in half
200g snow peas, washed, chopped in half
4 cups cooked brown rice
2 tbls Tamari sauce
1/4 cup fresh chopped parsley, to top
1 shallot stem, diced
To make:
In a large Wok add onion, spice and ginger.
Next, add the peas and mushrooms, and cook for 5min.
Add the rice and tamari, and stir through all ingredients, cook for a further 5mins on low temp.
Serve the meat on the rice mixture, top with parsley and shallots
