Falafels

Ingredients:
1 large brown onion, chopped 2 garlic cloves, chopped 2 teaspoons ground coriander 2 teaspoon cumin seeds 2 x 400g cans chickpeas, drained, rinsed 1 cup chopped fresh flat-leaf parsley leaves 1/3 cup lentil flour 1 egg
2tbls or 1/4 cup olive oil (to shallow fry)
Method:
Place onion, garlic, coriander, cumin, chickpeas, parsley, flour, egg, salt and pepper in your thermomix or food processor and process until almost smooth.
Flour your hands, and shape mixture into patties. (Optional- Cover and refrigerate for 30 minutes) Heat olive oil in a large frying pan over medium heat. Cook falafels for about 5 minutes on each side.
