Winter warmer Pumpkin Soup

Ingredients:

  • 1kg peeled, seeded, chopped butternut pumpkin

  • 3 potatoes, peeled, chopped

  • 1 large carrot, chopped

  • 1 brown onion, finely chopped

  • 1L Vegetable stock

  • ½ cup cream

  • freshly ground black pepper, to taste

To make:

  1. Place pumpkin, potato, carrot, onion & stock in a large saucepan. Bring to the boil, reduce heat and simmer for about 25 mins.

  2. Slightly cool mixture (so it's not boiling hot) and transfer to a blender, and puree. Stir in cream, and pepper.

  3. If soup is cold after this process, warm on stove until heated through.
