Winter warmer Pumpkin Soup

Ingredients:
1kg peeled, seeded, chopped butternut pumpkin
3 potatoes, peeled, chopped
1 large carrot, chopped
1 brown onion, finely chopped
1L Vegetable stock
½ cup cream
freshly ground black pepper, to taste
To make:
Place pumpkin, potato, carrot, onion & stock in a large saucepan. Bring to the boil, reduce heat and simmer for about 25 mins.
Slightly cool mixture (so it's not boiling hot) and transfer to a blender, and puree. Stir in cream, and pepper.
If soup is cold after this process, warm on stove until heated through.
