Chunky vegetable soup (vg,v)

Ingredients:
1 parsnip, peeled, chopped
1 turnip, peeled, chopped
1 large carrot, chopped
2 zucchini's, chopped
1 celery stem, chopped
2 Tbls tomato paste
400g diced tomatoes (Fresh or canned)
1 Litre Vegetable stock
1 large potato, peeled, chopped
1 brown onion, diced
2 sprigs of spring onion, chopped
1 tsp minced garlic (or 2 cloves of garlic)
pinch of ground pepper
Optional (see note)*
To make:
Place all ingredients in a slow cooker on low heat for 4-6 hours.
*Note: To make it more filling (for the man in my household) I added 250g of bow-tie pasta to the slow cooker, when all vegetables were soft (making it more of a stew😋).
