Homemade Beef Stroganoff

Ingredients:

  • 2 Tbs Olive oil

  • 500g beef stir-fry strips

  • 1 brown onion, sliced

  • 500g cup mushrooms, sliced

  • 2 Tbls Plain flour (can be lentil flour or GF flour)

  • 1 Tbls Dijon Mustard

  • 1 Tbls Tomato paste

  • 1 cup Beef stock

  • 2 Tbls Worcestershire sauce

  • 1/2 cup light sour cream

  • 1 cup flat-leaf parsley, chopped

To Make:

  1. Heat 1Tbls oil in a deep frying pan on medium heat and lightly brown beef, before tranferring to a bowl.

  2. Increase heat and add mushrooms and onion. Cook these for roughly 10minutes, until most of the liquid in pan has evaporated. Stir in flour, paste, and mustard, and cook for 1 minute.

  3. Add beef stock and Worcestershire sauce and stir, bringing to boil. Return beef strips to pan with sour cream, combining with other ingredients, and heating the beef through for 2 minutes.

  4. Serve with parley on top for freshness. Delicious!
